Clublinks operates Moore Park Golf (Sydney’s premier Golf entertainment venue), Centennial Parklands Sports Centre and Toll House Health & Wellness within the Moore Park Precinct on behalf of the Centennial Park and Moore Park Trust (Trust). Located within 5km from the Sydney CBD, the Moore Park Precinct has thrived in recent times; growing substantially year on year and continuously enhancing its products and services, customer experience and improving business performance.
Each year Moore Park Golf has over 22 million golf balls hit on the driving range, 75,000 rounds of golf played and 25,000 golf coaching experiences; Moore Park is a one stop golfing and entertainment destination.
The role
Reporting to both the Kitchen Manager and Food & Beverage Manager, the Sous Chef is responsible for assisting the running of the day-to-day operations of the kitchen whilst supporting and mentoring other team members on site to ensure the production of high-quality food for all hospitality outlets.

The role

Key deliverables will include:
- Ensure the production of consistent, high-quality food for all F&B offerings
- Mentor and train kitchen staff in kitchen department during daily preparation, upkeep of food standards and cleanliness, ensuring daily service runs smoothly
- Support Kitchen Manager regarding menus, customer feedback, limiting food wastage, and rotation of food
- Support Kitchen Manager in keeping food cost of goods and cost of labour at company standard
- Ensure the Kitchen remains in a clean, useable and safe state at all times
- Ensure compliance with WHS regulations, policies and procedures including timely incident, accident and hazard reporting

Essential
- Cert IV Commercial Cookery
- Food Safety Supervisor Certificate
- 5+ years culinary experience
- Minimum 2 years of work experience as a Sous Chef
- Exceptional leadership skills including a proven track record of developing high performing teams, mentoring and coaching
- Comfortable working in high paced, active F&B environment and delivering exceptional results
- Creativity and vast experience with variety of dietary requirements
- Experience in a la carte, paddock to plate, fresh to order cooking, banquets/events, high-end plate up skills
- Full Australian working rights are required
