Job Description:
Dromoland Castle is seeking an exceptional and experienced Assistant Food & Beverage Manager to support and lead the full operational performance of The Fig Tree Restaurant within the Golf & Wellness Country Club.

This is a senior, hands-on leadership role requiring a dynamic hospitality professional with strong commercial awareness, operational expertise, and a passion for delivering world-class guest experiences.



Operational Leadership:


  • Oversee the daily end-to-end operations of The Fig Tree Restaurant
  • Act as Manager-on-Duty, ensuring seamless service delivery at all times
  • Maintain exceptional service standards aligned with luxury hospitality expectations
  • Collaborate closely with kitchen and resort teams to ensure consistent quality and efficiency


Team Leadership & Development:


  • Lead, motivate, and develop a high-performing front-of-house team
  • Drive a culture of professionalism, accountability, and guest-centric service
  • Manage recruitment, training, performance reviews, and succession planning
  • Lead by example through visible, hands-on floor presence


Financial & Commercial Performance:


  • Drive revenue growth through upselling, promotions, and service excellence
  • Monitor KPIs including labour costs, payroll control, stock management, and gross margins
  • Support budgeting, forecasting, and cost-control initiatives
  • Ensure strong stock control procedures and minimise wastage


Guest Experience Excellence:


  • Deliver a consistently exceptional guest journey from arrival to departure
  • Proactively resolve guest concerns with professionalism and discretion
  • Build strong relationships with members, residents, and visitors
  • Uphold the luxury brand standards associated with Dromoland Estate


Compliance & Standards:


  • Ensure full compliance with health, safety, and food hygiene regulations
  • Maintain SOP implementation and continuous improvement practices
  • Support cross-departmental coordination within the Golf & Wellness Country Club




The ideal candidate will be:



  • An experienced Assistant Restaurant Manager or Assistant F&B Manager in a high-end or luxury environment
  • Commercially astute with strong financial understanding
  • A confident leader capable of inspiring and managing large teams
  • Highly organised, proactive, and solutions-focused
  • Passionate about hospitality and delivering five-star guest service
