This is a senior, hands-on leadership role requiring a dynamic hospitality professional with strong commercial awareness, operational expertise, and a passion for delivering world-class guest experiences.
Operational Leadership:
- Oversee the daily end-to-end operations of The Fig Tree Restaurant
- Act as Manager-on-Duty, ensuring seamless service delivery at all times
- Maintain exceptional service standards aligned with luxury hospitality expectations
- Collaborate closely with kitchen and resort teams to ensure consistent quality and efficiency
Team Leadership & Development:
- Lead, motivate, and develop a high-performing front-of-house team
- Drive a culture of professionalism, accountability, and guest-centric service
- Manage recruitment, training, performance reviews, and succession planning
- Lead by example through visible, hands-on floor presence
Financial & Commercial Performance:
- Drive revenue growth through upselling, promotions, and service excellence
- Monitor KPIs including labour costs, payroll control, stock management, and gross margins
- Support budgeting, forecasting, and cost-control initiatives
- Ensure strong stock control procedures and minimise wastage
Guest Experience Excellence:
- Deliver a consistently exceptional guest journey from arrival to departure
- Proactively resolve guest concerns with professionalism and discretion
- Build strong relationships with members, residents, and visitors
- Uphold the luxury brand standards associated with Dromoland Estate
Compliance & Standards:
- Ensure full compliance with health, safety, and food hygiene regulations
- Maintain SOP implementation and continuous improvement practices
- Support cross-departmental coordination within the Golf & Wellness Country Club
The ideal candidate will be:
- An experienced Assistant Restaurant Manager or Assistant F&B Manager in a high-end or luxury environment
- Commercially astute with strong financial understanding
- A confident leader capable of inspiring and managing large teams
- Highly organised, proactive, and solutions-focused
- Passionate about hospitality and delivering five-star guest service
